The Sheraton Addis, a Luxury Collection property in downtown Addis Ababa, the capital city of Ethiopia and Africa's diplomatic centre, is looking for a passionate, hands on and enthusiastic Sushi / Kaiseki / Teppanyaki  Chef for the opening of the new Chinese / Japanese fine dining restaurant Jade Garden. The first of its nature in Addis Ababa.

The opening is scheduled for late April / early May 2010, an experienced and professional Sushi / Kaiseki / Teppanyaki / Robata Chef is required for the pre-opening, launching and ongoing Japanese kitchen operations of this new high profile fine dining venue.

·         Your first role will be to support the Asian Head Chef in recruiting & training the brigade needed to run the Japanese kitchen smoothly, create / implement operational policies and procedures.

·         Upon opening, you will be responsible for all aspects of the Japanese kitchen functions of the restaurant, so proven leadership qualities are essential. You will also need to demonstrate culinary skills and make recommendations to maximize revenue and minimize costs. In the absence the Asian Head Chef you would be expected to take the lead.

·         Throughout all of your activities, maintaining a focus on customer service is imperative, therefore you will need to both train and develop staff, as well as performance manage the team. The upbeat individual should be visible to our clients and enjoy customer contact.

·         To be successful in your application as a Sushi / Kaiseki / Teppanyaki Chef, you will need to demonstrate previous experience of all of the above qualities, having already worked in a busy restaurant, preferably in a larger corporate organization and gained the according qualifications. You should be a highly motivated individual with the desire to succeed.

Qualifications

 

Education

.           Secondary schooling or equivalent technical school.

.           Received apprenticeship training or attended specialized food production course in a hotel school.

Knowledge/ skill

.           Thorough knowledge of Japanese cuisine including Sushi / Kaiseki / Teppanyaki

.           Thorough knowledge of globe fish cooking and robata is an advantage

.           Excellent communication and training skills

.           Knowledge of Cost control / Purchasing / Receiving

.           Computer literate

.           Good knowledge of menu engineering

.           HACCP and maintaining highest standards of hygiene

Experience

.           Experience in an international 5 star hotels / catering operation

.           International working experience abroad in a large kitchen

.           Developing Country or Hardship Experience preferred

.           Minimum of 5 years of experience in the Asian Cuisine out of which 3 years proven track record as Japanese chef

Language

.           Fluent in English
