The Sheraton Addis, a Luxury Collection property in downtown Addis Ababa, the capital city of Ethiopia and Africa's diplomatic center, is looking for a passionate, hands on and enthusiastic Asian Head Chef for the opening of the new Chinese / Japanese fine dining restaurant Jade Garden. The first of its nature in Addis Ababa.

The opening is scheduled for late April / early May 2010, an experienced and professional Asian Head Chef is required to oversee the pre-opening, launching and ongoing kitchen operations of this new high profile fine dining venue.

·         Your first role will be to recruit & train the brigade you need to run the kitchen smoothly, and liaise with the restaurant manager and EAME ic F&B to develop the business plan, operational policies and procedures.

·         Upon opening, you will be responsible for all aspects of the kitchen functions of the restaurant, so proven leadership qualities are essential. You will also need to demonstrate culinary skills and make recommendations to maximize revenue and minimize costs.

·         Throughout all of your activities, maintaining a focus on customer service is imperative, therefore you will need to both train and develop staff, as well as performance manage the team.

·         The upbeat individual should be visible to our clients and enjoy customer contact. Classical training is fine, but creativity and innovation must transpire in daily and adhoc high profile plated menus.

·         To be successful in your application, you will need to demonstrate previous experience of all of the above qualities, having already worked in a busy restaurant, serving up or more than 200 covers daily, preferably in a larger corporate organization and gained the according qualifications. Desired is the ability to speak a second language, preferably Cantonese or Mandarin. You should be a highly motivated individual with the desire to succeed.

General

Oversee the operation of the kitchen in conjunction with other Departmental Management.  Responsibilities include, but are not limited to, hiring, training, scheduling  and directing all culinary staff; visually inspecting all food product to be served to ensure they all meet the quality standards set out be Departmental and Hotel management; ensure proper receiving and storage of food products so as to comply with health department regulations; and adherence to all cost and quality control procedures.

Qualifications

 

Education

.           Secondary schooling or equivalent technical school.

.           Received apprenticeship training or attended specialized food production course in a hotel school.

Knowledge/ skill

.           Thorough knowledge of all sections of kitchen, including international cuisine (Asian:

Regional Chinese including dimsum preparation, Japanese including sushi / tapenyaki, Thai, Malay and

other).

.           Knowledge of volume production and yet have the ability to maintain the highest

standards is advantageous.

.           Ability to manage and motivate a diverse group of employees

.           Excellent communication and training skills

.           Knowledge of Cost control / Purchasing / Receiving

.           Computer literate

.           Good knowledge of menu engineering

.           HACCP and maintaining highest standards of hygiene

Experience

.           Experience in an international 5 star hotels / catering operation

.           International working experience abroad in a large kitchen

.           Developing Country or Hardship Experience preferred

.           Minimum of 8 years of experience in the Asian Cuisine out of which 3 years proven track record as lead chef

Language

.           Fluent in English
